Happy Fathers Day

Pork Chop with a Cherry Sauce and a Side of GreensMy dad came over today. I made him some Pork Chops. We had a little bit of Lost Abby ale and sat at the porch. Pretty Great.

So Much Kale

Kale Salad with Caramelised Pears and FetaI stumbled upon a whole bunch of kale with no idea what to do with it. So I picked up a few pears and some feta and a lemon and thought about it for a day. When I got home the next day, I sautéed some minced garlic. Then chopped up the kale and put it in with the garlic. I sliced up the pears and sautéed them in butter and brown sugar. Lemon juice over the kale and pears and combined them all into a salad with feta on top. 

I was really proud of this when it was done. The kale was spicy and mixed well with the sweet pears and salty feta. Next time I'd probably put the pears in the salad while they're still hot. They kind of shrank and lost their bite. But other than that--Great.

Trying new things

Risotto with Onions and Asiago CheeseI made Risotto for the first time the other day. It didn't turn out the greatest, but it wasn't bad. While I was sautéing the onions, my roommate asked me to teach him how I flip them in the air. I thought about if for a second and told him he just can't be afraid to do it. And I think that's true for all cooking. Now if only I could take my own advice for real life.

I had a lot of leftovers, so I've been making patties and pan frying them. It's been delicious to say the least.

I Like Pie

Strawberry Rhubarb pie topped with Apple SlicesI came onto a bunch of rhubarb the other day. All I could think of was pie. Really what else is there to do with rhubarb? My room mate, who makes pie crust for a living, helped me make a whole wheat crust. I made a regular filling and put the apples on top mostly for the look. It didn't turn out very well. I should have cooked it longer. But it was my first real pie and it looks pretty snazzy.

Leek Soup

Leek and Cauliflower Soup with Bacon Bits on Top

I had a large amount of leeks and cauliflower with not much to do. So I chopped them all up, added some ginger and simmered it all in chicken broth and cream. I took out the ginger and blended it all together. I couldn't taste much of the ginger so I put some of it back in. Toped it off with some bacon and some very sharp white cheddar. And then enjoyed it tremendously. I think next time I need to cook the cauliflower a little longer, or get a better food processor, because it was just a little too crunchy. But all and all pretty good.
